No party is complete without some bomb queso. And if it takes less than 10 minutes to make? Well that’s even better.
Nothing says ‘MERICA like a cold beer and hot queso.
And there’s something about the Fourth of July that makes you want to get all festive. July 4th parties are basically required to have a tacky amount of red, white, and blue. And the food is no exception.
But as a new mama, I knew I wouldn’t have a lot of time to put something together. So I came up with this super flavorful, 10 minute queso for all you baby mamas out there!
Please know that this is legit spicy, so scale back if you can’t handle the heat. You can nix the chipotles completely to make it milder. But make sure you at least include a can of mild Rotel to maintain that yummy flavor!
If you want your queso to be really white, you can garnish with the chopped chipotles instead of mixing them in. That’s what gives this queso its yellow color.
Otherwise, the tomatoes and feta will be the red & white part of the dish. Serve it up with blue corn tortilla chips to complete the American trio of colors. Then eat until your stomach hurts!
Spicy Chipotle Queso Recipe
- 1/2 medium organic onion
- 1 can HOT Rotel (non-gmo)
- 2 chipotles in adobo sauce
- 1 large spoonful of adobo sauce
- 4 oz organic cream cheese
- 8 oz block of monterrey jack cheese
- 1/2 cup organic milk
- 1 large organic tomato
- feta cheese
Give the onion a small dice and throw it in the skillet with bacon fat or cooking oil over medium heat. Mince the chipotle peppers. *Add the chipotles, the spoonful of adobo sauce, and the can of Rotel to the onions. Allow to cook down while you shred the cheese.
Shred the 8 ounce block of white monterrey jack cheese. Break the cream cheese into small pieces. Add both cheeses and the milk to the skillet, stirring to combine all ingredients.
As the cheeses melt and everything combines, chop your tomato into large chunks. Remember to stir your queso periodically. Once the cheese has melted completely, remove the skillet from the heat. Garnish with the chopped tomatoes, a sprinkle of feta, and a couple sprigs of cilantro. serve with blue corn tortilla chips for the 'red, white, and blue' theme!
*To make your queso white, leave out the chipotles. Use them as a garnish at the end so party guests can scoop it up with each bite!
