Strawberry Avocado Salad isn’t exactly a brand new creation, but this creamy lemon poppyseed dressing takes it over the top!
A friend of mine actually made me a similar salad in my first few weeks postpartum. And I started craving it hardcore this week! Lucky for me, Florida is in the beginning stages of the Winter strawberry season, so I get to enjoy this all year long. If you’re in an area that only gets to enjoy strawberries in the summer months, store this recipe on your pinterest board and dive in when the weather gets warmer.
Or, you can try this dressing on a wintery broccoli salad with some dried cranberries and almonds. Yum.
Its kind of crazy to me how often people resort to bottled dressings or store-bought mixes. Homemade dressing is one of the easiest ways that you can impress guests and add tons of flavor to a dish that some people consider boring.
If you’re one of those people, I would argue that you probably have never made your own salad dressing.
Let’s change that, shall we?
This creamy lemon poppyseed dressing starts with greek yogurt, which means its full of good-for-you fats. The kind that keep your brain working properly and also satisfy your hunger. So don’t go out and get the low-fat yogurt… you’re missing out on some great stuff! And most of the time, foods marketed as “low-fat” are also hiding added sugars to make up for the flavor that’s missing. And that’s no good at all.
Speaking of sugar, this dressing is sweetened with some good ole local honey. I’m a huge lover of using honey in dressings. It adds a depth of flavor and counteracts the acidity nicely.
It’s really pretty simple, which means you’ll feel super awesome when you open the fridge and have a beautiful batch of lemon poppyseed dressing to enjoy all week.
Or you can whip it up for a picnic with friends when the weather is nice this week. Enjoy it while it lasts, my fellow Floridians.
XOXO,
VICTORIA

*Plain or roasted nuts are great in this salad, but you can step it up a notch with some candied nuts! See my Berry Balsamic Salad recipe for an easy way to make lightly candied nuts.
