Have you guys seen my little nugget lately?
I literally cannot handle how freaking cute he is!
He makes me feel all warm and Christmasy.
There’s something about having babies that makes the holidays even better than before. I’ve been playing Christmas music like crazy and wanted to put up the tree long before Thanksgiving. And even though Leon isn’t old enough to really enjoy Christmas yet, I’ll get to pass down all of my favorite traditions in the next couple years.
My mom used to get us Christmas pajamas every year and we would open them on Christmas Eve. We would decorate sugar cookies together and pretend it was cold outside (since we rarely had a cold Christmas here in Florida). My siblings and I would put out carrots on the sidewalk for Santa’s reindeer. And a few years, I swear my Dad walked on the roof to make it sound like Santa was really at our house. My Mom & Dad always went all out and made it a ton of fun!
But my favorite part of any holiday has always been the food. Somehow, even the other details of the family gathering still involved food in some way. Cookies for Santa, carrots for his reindeer, and tons of good eats with the fam on Christmas day.
I’ll tell you though, one thing I did not have as a kid was this bomb Cranberry Salsa.
Not that I would’ve appreciated a dish like this one when I was a kid. But I’ve always loved spice, and this Cranberry Salsa is not lacking in that one bit!
A little jalapeno, a dash of cumin, some fresh cilantro, and a squeeze of lime. Slowly drizzle in that honey and you’ve got an unexpected masterpiece.
This year, Christmas & New Years are getting a little twist.
Cranberry Salsa & Goat Cheese Dip
- 12 oz fresh cranberries
- 1 jalapeno
- 2 tbsp fresh cilantro leaves
- 1 lime
- 1/3 cup raw honey
- 1 tsp sea salt
- 1/4 tsp black pepper
- 1/4 tsp ground cumin
- 8 oz log of goat cheese
- crackers for serving
- extra honey for serving
Rinse and dry the cranberries. Place in a food processor with an S-blade. Cut off the top of your jalapeño and remove the seeds and ribs. Dice & add to the food processor. Zest the entire lime into the cranberry mixture and add HALF the juice of the lime. (Reserve the other half for margaritas, of course!)
Add the salt, pepper, and cumin, and cilantro. Pulse the food processor until the ingredients are chopped finely, in a texture like chunky salsa. Remove the blade from the food processor and mix in the honey with a spoon.
For easier serving for a party appetizer, cut the goat cheese into slices. They won't be perfect, so just sprinkle the extra bits of cheese over the top! Spoon the cranberry salsa over the goat cheese and serve with crackers. NOM. (If desired, drizzle a little extra honey over the top of the cranberry salsa!)
