You know when you’re watching an episode of your favorite show and your favorite characters are having a baby so you sit on the couch and happy cry because you’re so excited for them? No, just me? Ok….
Its the season for happy tears, people! So maybe you’ll cry over how amazing these green beans are instead of over how precious Jim & Pam are.
These baked Christmas Green Beans are coated with burst cranberries and melty goat cheese, so each bite is super flavorful. The chopped almonds are the perfect little crunch. And once again, bacon is making an appearance. Holiday foods are all about decadence, after all!
The key to making this side dish perfect is using fresh green beans. None of that canned nonsense.
As with all my vegetables, I roasted these in the oven. The high heat and long roasting time allows for little caramelized bits to form. And you end up with green beans that are softened without being mushy. All the components come together in the end for a really wonderful combination of textures.
Beautiful colors, simple preparation, and bold flavors. That’s what these Christmas Green Beans are all about.

Christmas Green Beans Recipe
- 1 lb fresh green beans
- 1 cup fresh cranberries
- 1 tbsp olive oil
- 3 slices bacon
- 1 ounces goat cheese
- 1/4 cup almonds, chopped
- sea salt & black pepper, to taste
Heat oven to 425 degrees. Wash and dry the green beans and cranberries. Break off any pieces of stem left on the beans. Spread out the green beans and cranberries in an even layer on a lined baking sheet. Toss with oil, salt, and pepper, and roast for 25-30 minutes.
As the green beans cook, crisp up your bacon. Drain on a paper towel and chop up once cooled. (Reserve that bacon fat in a jar for future use!) Chop the raw almonds and set aside.
When the green beans have finished cooking, sprinkle the crumbled bacon, goat cheese, and almonds over the top. Toss together until everything is evenly distributed. Taste test your beans and add more salt and pepper if needed.
Serve up in a beautiful dish and top with additional bacon, goat cheese, and almonds, if desired! Merry Christmas!
For a large family gathering, I triple this recipe! Try using 3 (16 oz) bags of green beans, a 12 oz bag of fresh cranberries, a package of bacon, and a small 4 oz log of goat cheese. Easy peasy!
