5 Healthy Recipes for Young Professionals

You don’t have to be a pro in the kitchen to whip up these meals! Get tips on how to take these for lunch on the go & keep preparation simple!

From the time I was 14, I’ve always held a job. I started by building wooden fruit stands in my garage for a local company that supplied them to gas stations. Then, at the age of 16, I became a waitress. After moving to El Paso, I did everything from retail, to working in an apartment leasing office, to working on food trucks. Then I was a manager at a local restaurant when we moved back to Plant City. And at one point I was taking 19 college credit hours while working a full time job.

Needless to say, I used to pride myself on how busy I was. It was like a badge of honor for me, and I couldn’t imagine life any other way. But the truth is, I didn’t take care of myself during some of those busy times. I would eat like crap, skip workouts, and didn’t even give myself much time to relax.

Now, life looks a lot different. I’m 32 weeks pregnant and spend most of my days preparing for the arrival of our baby boy. But that doesn’t mean I don’t remember what it feels like to be up to my eyeballs in deadlines. And that’s why I was super stoked when my girl Anastasia Jones asked if I’d like to put together some recipes for her blog.

This ^ is Stasia (isn’t she beautiful?!).

This lady is just so bubbly and fun to be around. She cares about community and sees business interactions as a chance to build real relationships with people. The first time we met, she instantly made me feel like she was interested in really getting to know me. And I love that her blog is about helping young people to navigate the world of professionalism.

So Anastasia & I decided to bring our talents and passions together. This week, we brought you 5 Healthy Recipes for Young Professionals.

You’re in for something rather yummy, my friends.

DAY 1: VEGGIE LOADED LETTUCE WRAPS (with chipotle mayo)

I LOVE these wraps. I always need help getting extra veggies into my day. And the best part is, you get to eat them with this amazing chipotle mayo. The easiest lunch ever!

DAY 2: AVOCADO EGG SALAD

I have a thing for eggs. Fried eggs, Eggs Benedict, deviled eggs. They’re an awesome source of protein and go great with just about everything – including creamy avocado. Skip the mayo and enjoy this avocado egg salad on a bed of greens with a drizzle of easy homemade dressing. Or you could grab yourself a Born & Bread croissant and make the most amazing sandwich of your life. NOM.

DAY 3: BUFFALO CHICKEN WRAP

DAY 4: BLACKENED SHRIMP TACOS with AVOCADO & LIME CREMA

Tacos. Avocado. Lime Crema. I refuse to let you eat a boring lunch!

Stuffed Sweet Potatoes

DAY 5: KALE, SUN DRIED TOMATO, BACON & GOAT CHEESE STUFFED SWEET POTATOES

I was super stoked to wrap up our 5 Healthy Recipes for Young Professionals with these killer sweet potatoes. The kales softens up and takes on a nice sweetness when paired with the sun dried tomatoes. Goat cheese adds a unique tangy bite to this dish and is so heavenly and creamy. And bacon. Bacon crumbled on anything = happiness.
